Coconut Cake
- 2 sticks margarine, softened
- 2 c. sugar
- 4 eggs
- 3 c. self-rising flour
- 1 c. sweet milk
- 1 tsp. vanilla extract
- 2 Tbsp. margarine
- 1 (8 oz.) pkg. cream cheese, softened
- 1 box confectioners sugar
- 1 tsp. vanilla extract
- 2 1/2 c. Angel Flake coconut
- 1/4 c. coconut (for garnish)
- Cream butter and sugar.
- Add eggs, one at a time, beating after each.
- Beginning with flour, add milk and flour alternately and end with milk, beating after each addition.
- Blend in vanilla. Pour batter into three generously greased and floured 8-inch cake pans.
- Bake in a 350u0b0 oven for 25 minutes.
- Cool layers before removing (about 15 to 20 minutes).
- After removing layers, slice each layer in half to make a six layer cake.
