Potato Croquettes
- 3 lb. potatoes (8 medium), pared and cubed
- 1 1/4 tsp. salt, divided
- 1/2 c. hot milk
- 1/4 c. butter or margarine
- 1/8 tsp. pepper
- 3 eggs
- 2 Tbsp. finely chopped onion
- 2 1/2 c. fresh bread crumbs
- 1/2 c. vegetable oil
- Place potatoes in large saucepan.
- Add water to cover and 1 teaspoon of the salt.
- Cover and cook over medium-high heat until water comes to a boil.
- Reduce heat to low and simmer about 20 minutes or until potatoes are fork-tender; drain.
- Place in large bowl.
- Add milk, butter, pepper and remaining 1/4 teaspoon salt; beat or mash until smooth.
- Stir in 1 of the eggs and onion. Cover and chill at least 2 hours.
- Divide mixture into 12 equal pieces.
- With floured hands, shape each piece into a log.
