Potato Croquettes

  1. Place potatoes in large saucepan.
  2. Add water to cover and 1 teaspoon of the salt.
  3. Cover and cook over medium-high heat until water comes to a boil.
  4. Reduce heat to low and simmer about 20 minutes or until potatoes are fork-tender; drain.
  5. Place in large bowl.
  6. Add milk, butter, pepper and remaining 1/4 teaspoon salt; beat or mash until smooth.
  7. Stir in 1 of the eggs and onion. Cover and chill at least 2 hours.
  8. Divide mixture into 12 equal pieces.
  9. With floured hands, shape each piece into a log.
