French Canadian Meat Pie
- 2 lb. ground lean pork
- 1 lb. ground lean beef
- 2 large onions, chopped fine
- 1 clove garlic, chopped fine
- 2 1/2 tsp. poultry seasoning
- 2 tsp. salt
- 1 tsp. celery salt
- 1/2 tsp. black pepper
- 1 tsp. ground sage
- 1 c. water
- 3 medium potatoes, cooked and diced
- 2 pie crusts
- Combine pork, beef, onions and garlic in a large heated skillet.
- Cook, stirring often, until meat loses its pinkness. Stir in seasonings and water.
- Cover and simmer 20 minutes. Uncover, simmer 10 more minutes.
- Remove from heat; stir in potatoes.
- Prepare pie crusts; spoon 1/2 of cooked meat into pie shell.
- Fold edges over meat; brush with egg.
- Roll out 10-inch round for top of pie.
- Trim flush with edge of pan.
- Brush top with egg.
- Cut small slits in pastry near center.
- Bake at 425u0b0 for 15 minutes, then at 350u0b0 for 25 minutes.
- Makes 2 pies.
