Taco Casserole(Yield: 8 Servings)

  1. Preheat oven to 375u0b0.
  2. Combine stuffing, corn and 1/2 C water; stir well.
  3. Press mixture into a 13 x 9-inch baking dish coated with cooking spray.
  4. Bake at 375u0b0 for 10 minutes.
  5. Remove from oven; set aside.
  6. Cook meat and onion in a large nonstick skillet over medium-high heat until meat is browned, stirring to crumble meat.
  7. Drain well; return to pan.
  8. Add remaining 1/2 C water, beans, salsa, and seasoning; stir well.
  9. Spoon meat mixture over stuffing mixture; top with cheese.
  10. Cover and bake at 375u0b0 for 20 minutes or until cheese is bubbly.
  11. Cut into squares.
