Turkey Loaf
- 4 chicken bouillon cubes
- 2 c. milk
- 1 Tbsp. butter or margarine
- 1/2 tsp. salt
- 1/4 tsp. thyme
- 1/8 tsp. pepper
- 3 c. diced cooked turkey
- 2 c. soft bread crumbs
- 1 c. finely chopped celery
- 1/4 c. finely chopped onion
- 1 Tbsp. chopped parsley
- 3 eggs, slightly beaten
- Dissolve bouillon cubes in milk in a small saucepan over low heat.
- Add butter, salt, thyme and pepper; cool slightly.
- Combine turkey, bread crumbs, celery, onion and parsley.
- Combine bouillon mixture and eggs; add to turkey mixture.
- Mix lightly until blended.
- Place mixture in a greased 1 1/2-quart loaf pan.
- Bake at 350u0b0 for approximately an hour or until a knife inserted near center comes out clean.
- Slice and serve with hot cranberry sauce.
