Sausage Casserole
- 1 lb. hot sausage, cooked and fat drained off
- 1 medium size green pepper, chopped
- 1 small onion, chopped
- 1/2 c. celery, chopped
- 1 (4 oz.) can water chestnuts, chopped
- 1 (4 oz.) jar pimento, chopped
- 1/2 c. fresh or canned mushrooms, chopped
- 1 c. raw rice (may use Minute rice)
- 1 c. sharp Cheddar cheese, shredded
- 1 (10 3/4 oz.) can cream of chicken soup
- 1 (10 3/4 oz.) can cream of mushroom soup
- Heat oven to 325u0b0.
- Brown
- and
- scramble sausage; saute pepper, onion and celery
- in
- 1
- tablespoon
- oil until tender. Mix with remaining ingredients.
- Pour into an 8 x 12 x 2-inch baking dish and bake, covered, for about 1 hour and 25 minutes for
- raw rice.
- If
- using
- Minute
- rice, bake for 45 minutes. Serves 10.
