Apple Bread

  1. Cream butter; slowly add sugar and beat until light and lemon colored.
  2. Beat in 2 eggs.
  3. Sift the flour, salt, baking soda and baking powder together.
  4. Add to the creamed mixture alternately with the milk beginning and ending with the dry ingredients.
  5. Stir in the apples, walnuts and the vanilla extract or lemon rind. Butter a 9 or 10 x 5 x 3-inch loaf tin.
  6. Spoon the batter into the tin and bake in a preheated 350u0b0 oven 50 to 60 minutes, until the loaf pulls away slightly from the sides of the tin or until a cake tester comes out clean.
  7. Cool in the pan 5 minutes, then cool completely on a rack before serving.
