Apple Bread
- 1/2 c. butter or margarine
- 2 eggs
- 1/2 tsp. salt
- 1 tsp. double-acting baking powder
- 2 Tbsp. buttermilk or sour milk
- 1/2 c. coarsely chopped walnuts or pecans
- 1 c. sugar
- 2 c. flour
- 1/2 tsp. baking soda
- 1 c. coarsely chopped apples, unpeeled
- 1 tsp. vanilla extract or grated lemon rind
- Cream butter; slowly add sugar and beat until light and lemon colored.
- Beat in 2 eggs.
- Sift the flour, salt, baking soda and baking powder together.
- Add to the creamed mixture alternately with the milk beginning and ending with the dry ingredients.
- Stir in the apples, walnuts and the vanilla extract or lemon rind. Butter a 9 or 10 x 5 x 3-inch loaf tin.
- Spoon the batter into the tin and bake in a preheated 350u0b0 oven 50 to 60 minutes, until the loaf pulls away slightly from the sides of the tin or until a cake tester comes out clean.
- Cool in the pan 5 minutes, then cool completely on a rack before serving.
