Cajun Ducks

  1. Rub ducks with bacon grease.
  2. Season with salt and pepper. Stuff each with onion, bell pepper, apple, garlic clove and celery.
  3. Place ducks in a Dutch oven and cover with water.
  4. Add bouillon cubes and 1/2 cup sherry.
  5. Cook for 2 hours on medium heat.
  6. Take ducks out of pan.
  7. Add green onions, mushrooms and rest of sherry to drippings.
  8. Simmer 15 minutes.
  9. Split ducks. Serve over hot rice with sauce.
