Southern Peach Coffee Cake
- 2 c. all-purpose flour
- 1/4 c. sugar
- 1/2 tsp. salt
- 1 pkg. active dry yeast
- 2 Tbsp. butter, softened
- 1/2 c. hot water
- 1 egg, at room temperature
- 3/4 tsp. vanilla extract
- 1/4 c. packed brown sugar
- 1/2 tsp. cinnamon
- 1 Tbsp. butterscotch dessert mix
- 2 Tbsp. butter
- 1/2 c. powdered sugar
- 1/4 tsp. nutmeg
- 1/4 tsp. vanilla flavoring
- 2 to 3 tsp. milk
- 1 (16 oz.) can peach slices, drained
- In mixer bowl, combine 1/2 cup of the flour, sugar, salt and yeast.
- Add 2 tablespoons butter and water to dry ingredients. Beat 2 minutes at medium speed.
- Add egg, vanilla flavoring and another 1/2 cup of flour.
- Beat at high speed 2 minutes.
- By hand, stir in 3/4 cup flour to make a stiff batter.
- Spread in greased 9-inch square pan.
