Chocolate Marble Cheese Cake
- 9-inch pie crust
- 8 oz. cream cheese, softened
- 1/2 c. granulated sugar
- 1 tsp. vanilla
- 2 egg yolks
- 1 tsp. unflavored gelatin
- 1/4 c. water
- 1 c. whipping cream
- 4 oz. semi-sweet chocolate chips, melted
- Beat cream cheese, sugar and vanilla until smooth.
- Beat in egg yolks one at a time until well blended.
- Combine gelatin and water in small saucepan over low heat.
- Stir until well dissolved; cool slightly.
- Beat gelatin mixture into batter.
- Combine 3/4 cup batter and melted chocolate.
- Whip cream until soft peaks form. Fold 1/2 into chocolate batter and 1/2 into vanilla batter with large spoon; alternate batters into crust until all batter is used.
- Use a knife to swirl batter to form marble pattern.
- Chill for 3 hours.
- Garnish as desired.
