Broccoli Delight Salad
- 5 c. chopped fresh broccoli
- 1/2 c. raisins
- 1/2 c. diced apple
- 1/4 c. chopped red onion
- 1/4 c. sugar
- 2 Tbsp. vinegar
- 3/4 c. mayonnaise
- 10 bacon slices, cooked and crumbled
- 1 c. sunflower seeds
- 1/2 c. nonfat plain yogurt
- 1/2 Tbsp. reduced calorie French dressing
- 1 tsp. prepared mustard
- 1/4 tsp. celery seed
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 c. diced cooked potatoes
- 1/2 c. sliced radishes
- 1/2 c. dried zucchini (about 1 medium)
- 1/2 c. thinly sliced celery (about 2 medium stalks)
- 1/4 c. shredded carrots (about 2 medium)
- 1/4 c. sliced green onions (with tops)
- 1 hard-cooked egg, chopped
- Mix yogurt, French dressing, mustard, celery seed, salt and pepper in medium glass or plastic bowl or in heavy plastic bag. Add remaining ingredients; toss until vegetables are evenly coated. Cover and refrigerate at least 3 hours.
- Serves 6.
