Smoked Sausage, Vegetables And Mexican Rice
- 1 Tbsp. vegetable oil
- 1 c. uncooked long grain rice
- 1 clove garlic, finely chopped
- 1 medium onion, chopped
- 1/4 c. tomato sauce
- 1 1/2 c. water
- 1/2 tsp. cumin
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 lb. smoked sausage, sliced
- 3/4 c. carrots, sliced
- 1 medium zucchini, sliced lengthwise and cut in pieces
- Heat oil in a large, heavy skillet.
- Add rice; brown until rice is golden brown.
- Add garlic and onion; saute 1 to 2 minutes. Add tomato sauce, water, cumin, salt and pepper.
- Add sausage and carrots.
- Bring to a boil, reduce heat, cover and simmer for 20 minutes.
- Add zucchini.
- Cover; simmer another 10 minutes, or until the liquid is evaporated and the rice is soft.
- Makes 6 servings.
