Smoked Sausage, Vegetables And Mexican Rice

  1. Heat oil in a large, heavy skillet.
  2. Add rice; brown until rice is golden brown.
  3. Add garlic and onion; saute 1 to 2 minutes. Add tomato sauce, water, cumin, salt and pepper.
  4. Add sausage and carrots.
  5. Bring to a boil, reduce heat, cover and simmer for 20 minutes.
  6. Add zucchini.
  7. Cover; simmer another 10 minutes, or until the liquid is evaporated and the rice is soft.
  8. Makes 6 servings.
