Minestrone
- 1 medium onion, chopped
- 1 stalk celery, chopped
- 2 medium carrots, chopped
- 1 c. fresh or frozen green beans
- 1 medium zucchini, chopped
- 1 (10 oz.) pkg. frozen chopped spinach
- 1 (28 oz.) can tomatoes
- 1/2 c. uncooked macaroni (try whole wheat)
- 1 (15 oz.) can navy beans with juice
- 1/4 tsp. basil
- 1/4 tsp. oregano
- 1/4 tsp. cayenne pepper
- water as needed
- 2 c. stock
- 1 medium potato, cut into eighths
- 1/2 c. onions, sliced
- 1/2 c. celery, sliced
- 1/2 tsp. fresh ground black pepper
- 1 Tbsp. dried parsley
- This is a fast soup, that is, it takes 10 minutes to get everything into the pot.
- It's the prototype for any quick soup. Just start with stock and add any vegetables, potatoes, rice, lentils or other grains or legumes and cook for 1 hour.
