Polenta Chicken Corn Meal Mush
- 2 1/2 lb. chicken, cut up
- 1/2 c. butter
- 4 Tbsp. olive oil
- 1 chopped onion
- 2 chopped carrots
- 1 chopped piece of celery
- 1 small can mushrooms, chopped
- 1 c. canned Italian plum tomatoes
- 1/2 c. dry white wine
- Saute the chicken until golden brown in the butter and oil, about 10 minutes.
- Then add the chopped onion, carrots, celery, mushrooms and cook 5 minutes until the onions are wilted.
- Then add the tomatoes and the wine.
- Bring to a boil; cover and cook over low heat, stirring occasionally.
- When chicken is tender, place on a hot platter.
- Strain sauce; season to taste, heat and pour over chicken.
- May top with fresh mushrooms sauteed in butter and serve with polenta.
- Top with grated cheese.
