Polenta Chicken Corn Meal Mush

  1. Saute the chicken until golden brown in the butter and oil, about 10 minutes.
  2. Then add the chopped onion, carrots, celery, mushrooms and cook 5 minutes until the onions are wilted.
  3. Then add the tomatoes and the wine.
  4. Bring to a boil; cover and cook over low heat, stirring occasionally.
  5. When chicken is tender, place on a hot platter.
  6. Strain sauce; season to taste, heat and pour over chicken.
  7. May top with fresh mushrooms sauteed in butter and serve with polenta.
  8. Top with grated cheese.
