Garbanzo Rice Chili Soup
- 1 1/2 lb. beef round steak
- 2 tsp. vegetable oil
- 1 1/2 c. chopped bell pepper
- 1 c. chopped onion
- 1 1/2 c. water
- 1 Tbsp. fresh oregano (or 1 tsp. dried oregano leaves)
- 2 tsp. paprika
- 1 tsp. ground cumin
- 1/2 tsp. salt
- 1/2 tsp. crushed red pepper
- 1/2 tsp. ground coriander
- 1 (10 oz.) can condensed beef broth
- 1 clove garlic, freshly chopped
- 1 bay leaf
- 3 c. cooked rice
- 1 (15 oz.) can garbanzo beans drained, except for 2 Tbsp.
- Cut meat in chunks and brown in oil. Saute onion and bell pepper with meat till tender. Add all other ingredients and cook for 1 hour.
