Meat Loaf Superb
- 1 lb. ground ham
- 1/2 lb. ground beef
- 1/2 lb. ground pork
- 2 eggs, beaten
- 1 c. quick cooking oats
- 3/4 c. tomato juice
- 1 small onion, finely chopped
- 1/2 tsp. pepper
- 4 sq. slices Mozzarella, processed American or Swiss cheese, cut diagonally into triangles
- 2 Tbsp. butter
- 1 large onion, chopped
- 2 c. bite-size tofu pieces
- 2 Tbsp. tamari (can be omitted)
- 1 lb. spinach, washed and chopped (leaves only)
- juice of 1 large lemon
- steamed rice
- Saute in large skillet over medium heat for 5 minutes the butter and onion.
- Add and saute 8 to 10 minutes the tofu pieces and add tamari.
- Add and stir until wilted, 5 to 8 minutes, the spinach and sprinkle with lemon juice.
- Serve over steamed rice and enjoy.
