Speedy Spinach Lasagne
- 1 (1-qt. size) spaghetti sauce
- 2 eggs
- 1 (1 lb.) Ricotta cheese
- 1/2 tsp. salt
- 1 (15 oz.) can spinach, drained
- 1/2 c. grated Parmesan cheese
- 1/2 lb. Mozzarella cheese
- 1/2 lb. uncooked lasagne noodles
- Beat eggs in a large bowl.
- Add Ricotta cheese, spinach, salt and 1/4 cup Parmesan cheese. Lightly grease bottom of a 9 x 13 x 2-inch baking dish.
- Cover with a little sauce.
- Layer 1/2 of the noodles, 1/2 the cheese-spinach mixture, 1/2 the Mozzarella cheese and 1/2 the spaghetti sauce.
- Repeat layers.
- Sprinkle with 1/4 cup Parmesan cheese.
- Cover dish with a lightly greased sheet of foil.
- Bake at 350u0b0 for 1 1/4 hours.
- Let stand 10 minutes before cutting into squares and serving.
- Serves 8.
