Zucchini Bread
- 3 c. sifted flour
- 1 1/2 tsp. cinnamon
- 1 tsp. baking soda
- 1 tsp. salt
- 1/4 tsp. baking powder
- 3 eggs
- 2 c. sugar
- 1 c. oil
- 1 Tbsp. vanilla
- 2 c. grated, unpeeled zucchini
- 1/2 c. chopped nuts
- 1 tsp. flour
- 1 handful raisins
- Sift the 3 cups of flour, cinnamon, soda, baking powder and salt.
- Beat eggs well.
- Gradually add sugar and oil, mixing well. Add vanilla and dry ingredients; mixing well.
- Add vanilla and dry ingredients; blend well.
- Stir in zucchini.
- Mix nuts with 1 teaspoon of flour; stir into batter.
- Pour into 2 greased loaf pans.
- Bake in 350u0b0 oven for 1 hour.
- Cool in pans on rack 10 minutes.
- Remove from pan and cool on rack.
