X-Tra Fancy Pound Cake
- 4 c. sifted flour
- 2 tsp. double-acting baking powder
- 1 tsp. salt
- 1/4 tsp. mace
- 1 lb. butter (2 c.)
- 1 lb. sifted 10x sugar
- 1 tsp. vanilla
- 1/2 tsp. lemon extract
- 6 unbeaten eggs
- 3/4 c. milk
- 1 1/2 c. chopped nuts
- Sift flour with baking powder, salt and mace.
- Cream butter thoroughly.
- Gradually add 10x sugar, creaming well.
- Continue beating until light and fluffy.
- Blend in extracts and add eggs, one at a time, beating well after each.
- Add dry ingredients alternately with milk.
- Begin and end with dry ingredients.
- Blend thoroughly on low speed after each addition.
- Stir in nuts.
- Turn into well-greased 10-inch tube pan.
- Bake at 325u0b0 for 1 1/4 to 1 1/2 hours.
- Cool and frost, if desired.
