Cheesy Beef Enchiladas
- 2 c. cottage or ricotta cheese
- 1 c. grated Monterey Jack cheese
- 1 can (4 oz.) chopped chiles
- 1 egg, beaten
- 1 tsp. chili powder
- 1/2 tsp. onion salt
- 1/2 tsp. paprika
- 8 to 10 tortillas
- 2 cans enchilada sauce (mild or hot to your taste)
- 1 can refried beans
- 1 lb. hamburger
- 1 pkg. taco seasoning
- 2 c. grated cheddar cheese
- sour cream
- chopped green onion
- Prepare hamburger with taco seasoning according to package directions.
- Heat refried beans.
- Mix together cottage cheese, Monterey Jack cheese, chopped chiles, egg and seasonings. Microwave tortillas on HIGH for 30 to 45 seconds or until pliable. Place refried beans evenly on each tortilla; next place hamburger mixture on each tortilla, then Monterey Jack cheese filling on each tortilla.
- Roll the tortillas up in jellyroll fashion; place seam side down in an 11 3/4 x 7 1/2 x 1 3/4 inch baking dish. Cover with enchilada sauce.
- Microwave on HIGH for 10 to 12 minutes or until hot and bubbly.
- Sprinkle with cheddar cheese; microwave for an additional 1 to 2 minutes or until cheese is melted.
- Garnish with sour cream and green onions.
