Mexican Joes
- 2 tsp. olive or vegetable oil
- 1/2 c. diced onion
- 1 small green chili pepper, seeded and minced
- 1 small garlic clove, minced
- 3/4 c. cooked ground beef, crumbled
- 1/2 c. tomato sauce
- 1 Tbsp. taco seasoning mix
- 2 hamburger buns, split and toasted
- 1/4 c. Monterey Jack cheese, shredded
- 1/2 c. shredded lettuce
- 1/2 medium tomato, diced
- 1 1/2 Tbsp. sour cream
- 2 large pitted black olives, sliced
- In small nonstick skillet, heat oil.
- Add onion, pepper and garlic.
- Saute until softened.
- Stir in ground beef, tomato sauce and seasoning mix and cook over low heat until heated through, about 5 minutes.
- To serve, place bottom half of each bun on individual plates.
- Top each with half of the meat mixture. Sprinkle each portion with half of cheese, lettuce, tomato, sour cream and olive slices and top half of bun.
- Makes 2 servings (1 each).
