Lemon Chicken With Mushrooms
- 2 chicken cutlets
- 3 Tbsp. plain flour
- 1 c. sliced mushrooms
- 1 garlic clove, minced
- 1/2 c. chicken broth
- 2 Tbsp. lemon juice
- 1 tsp. chopped parsley
- 1/8 tsp. white pepper
- 1 tsp. each: margarine and olive or vegetable oil
- Dredge chicken in flour.
- In a 10-inch skillet, combine margarine and oil.
- Heat until margarine is melted.
- Add chicken; cook over medium high heat, turning once, until lightly browned, 2 to 3 minutes on each side.
- Place chicken on plate; set aside.
- In same pan, mix mushrooms and garlic; saute until mushrooms are soft.
- Sprinkle with rest of flour; stir to combine.
- Stir in rest of ingredients and boil.
- Simmer.
- Return chicken to skillet and cook until heated through.
