Black Cherry Jello Salad
- 1 large box black cherry jello (diet or regular)
- 1 small can crushed pineapple, drain and save juice
- 1 large can pitted black cherries, drain and save juice
- 1 c. chopped pecans
- 1 pt. whipping cream (if Cool Whip is used, put some unjelled, moveable, jello in part of Cool Whip to make it more spreadable)
- Mix 2 cups hot water in jello until dissolved, then pour juices into 2-cup container and add water to make 2 cups.
- Add this to jello mixture; stir until well mixed.
- Add pineapple, cherries and nuts.
- Put in refrigerator and let jell until thick but not set.
- Usually about 45 to 50 minutes depending on your refrigerator.
- When it is thick, fold whipped cream or the thinned Cool Whip into the jello.
- Be sure and get jello out of corners of bowl.
- Can be made a beautiful dish with purple and white stripes on top, or maybe "swirls."
- May add whole pecans on top. Cut in squares and serve on lettuce.
- Makes 8 or 10 squares depending on size you cut them.
- Great for company.
