Cinnamon Potato Rolls
- 3/4 c. sugar
- 3/4 c. hot mashed potatoes
- 1 1/2 c. warm water
- 2 pkg. active dry yeast
- 1/2 c. butter or margarine
- 2 eggs
- 2 tsp. salt
- 6 1/2 c. flour
- 1 1/3 c. packed brown sugar
- 1/2 tsp. cinnamon
- 3 Tbsp. cream
- 2 Tbsp. butter
- Combine in large bowl, sugar and potatoes; add water and yeast to mixture.
- Cover and let set for 1 hour in warm place.
- Combine filling ingredients and set aside.
- Stir dough down.
- Mix in butter, eggs and salt.
- Gradually add flour.
- Turn out on floured surface; knead until smooth.
- Divide dough in half; roll out in squares.
- Divide filling and spread on each half of dough.
- Roll; cut in slices.
- Place in 9-inch pan.
- Cover and raise until double in volume.
- Bake at 350u0b0 for 35 to 40 minutes.
- Yield: 18.
