Polynesian Sweet And Sour Meatballs
- 1 1/2 lb. lean ground beef
- 3/4 c. dry bread crumbs
- 1/4 c. milk
- 1 egg, slightly beaten
- 1/2 tsp. salt
- dash of pepper
- dash of paprika powder
- dash of garlic powder
- 1 (8 oz.) can crushed pineapple
- 1/2 c. apple cider vinegar
- 1/4 c. brown sugar
- 2 Tbsp. light soy sauce
- 1 tsp. ground ginger
- 1 Tbsp. cornstarch
- 1 Tbsp. water
- rice
- Combine first 8 ingredients lightly, but well.
- Form into 30 meatballs, using a rounded teaspoon.
- Drain pineapple; reserve liquid; refrigerate pineapple.
- Add water to reserved liquid to measure 3/4 cup.
- Combine liquid with vinegar and next 3 ingredients in large skillet.
- Heat to boil; add meatballs. Cover; simmer 15 to 20 minutes, or until meatballs are cooked. Stir occasionally.
- Stir in drained pineapple.
- Combine cornstarch and water; stir into meatballs.
- Cook until sauce is thickened, stirring constantly.
- Serve over hot cooked rice.
