Shrimply Delicious Quiche
- 3/4 lb. rock shrimp (fresh or frozen), cooked
- 1 1/2 c. sliced mushrooms (fresh)
- 2/3 c. sliced green onions
- 1/4 c. butter, melted
- 4 eggs, well beaten
- 1 1/2 c. half and half
- 1 tsp. salt
- 1/8 tsp. dry mustard
- 1 c. (4 oz.) shredded Mozzarella cheese
- 2 unbaked (9-inch) pie shells
- Chop shrimp (hold).
- Saute mushrooms and onions in butter until tender, but not brown.
- Beat eggs, half and half, salt and mustard in bowl until smooth.
- Layer 1/2 shrimp, 1/2 mushroom mixture, and 1/2 of the Mozzarella into each pie shell.
- Pour 1/2 of the egg mixture into each pie shell.
- Bake in 425u0b0 oven for 15 minutes.
- Reduce to 300u0b0 and continue 30 minutes.
- Let set for 15 minutes before serving.
- Makes 8 servings.
