Glazed Ham With Sweet Potatoes
- 1 slice ham steak (1 1/4 lb.)
- 1 can sweet potatoes, drained (16 oz.)
- 2 Tbsp. apricot jam or preserves
- 1 tsp. Dijon mustard
- 1 can sliced peaches (16 oz.)
- 2 Tbsp. maple syrup, divided
- Preheat broiler.
- Position oven rack about 4 inches from heat source.
- Place ham in shallow pan.
- Surround with peaches and sweet potatoes; drizzle peaches and sweet potatoes with 1 tablespoon maple syrup.
- Broil 5 minutes or until lightly browned. Meanwhile, heat combined jam and mustard in microwave until jam is melted; stir until well-blended.
- Turn ham, peaches and sweet potatoes over; brush ham with jam mixture.
- Drizzle peaches and sweet potatoes with remaining 1 tablespoon maple syrup.
- Continue broiling 5 minutes or until thoroughly heated.
- Serves 4.
