Autumn Chutney
- 8 to 10 Empire or other cooking apples
- 6 pears
- 1 1/4 c. apple cider
- 2 Tbsp. concentrated lemon juice
- 1/2 c. brown sugar (or to taste)
- 2 1/2 tsp. cinnamon
- 3/4 tsp. ginger
- 1/4 tsp. cloves
- 1/4 tsp. nutmeg
- 8 oz. chopped dates
- 8 to 10 oz. raisins (Sultanas, if desired)
- 3 to 4 Tbsp. orange marmalade
- a few chopped red and green maraschino cherries (for color)
- 1 Tbsp. cherry juice
- 2 Tbsp. raspberry syrup (optional)
- Peel and chop apples and pears.
- Begin cooking them in large saucepan in cider and lemon juice, stirring frequently.
- Add sugar and spices as juices come from fruit.
- Add remaining ingredients and cook, stirring frequently, at gentle bubble, until moisture cooks off and mixture thickens.
- Keeps well for several weeks in the refrigerator.
- Freeze or can for longer storage.
- Serve warm as a side dish or garnish for beef, ham or pork.
- Also makes a good stuffing for pork chops.
