Jack-O-Lantern Cookies
- 2 c. all-purpose flour
- 1 c. quick oats, uncooked
- 1 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 1 c. margarine, softened
- 1 c. brown sugar, firmly packed
- 1 c. sugar
- 1 egg. slightly beaten
- 1 tsp. vanilla
- 1 c. solid packed pumpkin
- 1 c. chocolate chips or mini chips
- assorted icings or peanut butter
- assorted candies, raisins and nuts for decoration
- Preheat oven to 350u0b0.
- Combine flour, oats, baking soda, cinnamon and salt; set aside.
- Cream butter and gradually add sugars, beating until light and fluffy.
- Add egg and vanilla; mix well.
- Add dry ingredients and pumpkin, mixing well.
- Stir in chocolate chips.
- To form cookie, drop dough by teaspoon onto lightly greased cookie sheet, spreading into pumpkin shape.
- Add a little dough to form stem.
- Bake until lightly brown, approximately 8 to 10 minutes.
- Remove from cookie sheets to cool.
- Decorate using icing, candies, raisins, nuts, etc.
