Clinton'S Chips
- 1 1/2 c. sifted plain flour
- 1 tsp. salt
- 1 tsp. baking soda
- 1 c. packed vegetable shortening
- 1 c. packed light brown sugar
- 1/2 c. granulated sugar
- 1 tsp. vanilla
- 2 eggs
- 2 c. old-fashioned oats
- 1 (12 oz.) pkg. semi-sweet chocolate chips
- Preheat oven to 350u0b0.
- Combine flour, salt and baking soda on waxed paper.
- Set aside.
- Mix shortening, sugars and vanilla with an electric mixer until creamy.
- Add eggs and beat until light and fluffy.
- Add flour mixture and oats.
- Stir in chocolate chips. Drop by well-rounded teaspoonful onto a greased baking sheet. Bake 8 to 10 minutes or until golden brown.
- Remove baking sheet to a wire rack for 2 minutes before removing cookies.
- Remove cookies onto a wire rack to cool completely.
- Makes approximately 7 1/2 dozen cookies.
