Fresh Green Bean Salad
- 3 qt. water
- 1 1/2 tsp. salt
- 1 lb. fresh green string beans, trimmed and washed
- 3 Tbsp. red wine vinegar
- 1/2 tsp. dry mustard
- freshly ground black pepper
- 1/2 c. olive oil
- 12 firm, ripe cherry tomatoes
- 1 large red sweet onion, peeled and sliced in 1/8-inch rings
- Bring water and 1/2 teaspoon salt to a boil in large pan. Drop in beans and boil briskly, uncovered, for 10 minutes or less. Beans should be tender, but still slightly resistant to the bite. Drain beans and transfer to serving bowl.
- Blend vinegar, remaining salt, mustard and pepper together with whisk in small bowl.
- Continue beating with whisk and add oil slowly.
- Whisk until smooth.
- Pour dressing over beans in serving bowl.
- Add tomatoes and onions; toss with wooden spoons.
- Cover bowl with plastic wrap and refrigerate at least 2 hours.
