Spicy Pumpkin Bars
- 1/2 c. shortening
- 1 c. brown sugar
- 1/4 c. sugar
- 4 eggs
- 2 c. canned pumpkin
- 2 c. sifted flour
- 4 tsp. baking powder
- 1/4 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1 tsp. ground ginger
- 1/2 tsp. salt
- Cream Cheese Icing
- Cream together the shortening and sugars until light and fluffy.
- Add eggs, one at a time, beating well after each addition. Beat in pumpkin.
- Sift together dry ingredients.
- Gradually stir into creamed mixture.
- Spread batter in greased 15 1/2 x 10 1/2 x 1-inch jelly roll pan.
- Bake at 350u0b0 for 30 minutes, or until done. Cool in pan.
- Spread with Cream Cheese Icing.
- Sprinkle with chopped walnuts or pecan halves.
- Makes 32 bars.
