Bar Cookies
- 1/2 c. margarine
- 3/4 c. brown sugar, packed
- 2 eggs
- 1 tsp. vanilla
- 3/4 c. flour plus 2 Tbsp.
- 1/4 tsp. salt
- 1/2 c. chopped nuts
- 1/4 tsp. baking powder
- 2 c. miniature marshmallows
- 1 (6 oz.) pkg. butterscotch bits
- 1 c. peanut butter
- 2 c. Rice Krispies
- Cream sugar and margarine.
- Add eggs and vanilla.
- Mix flour, salt, baking powder and nuts.
- Add to other mixture.
- Spread in greased 13 x 3-inch pan.
- Bake at 350u0b0 for 15 to 20 minutes.
- When done, sprinkle with marshmallows and return to oven until puffy and beginning to melt.
- Remove from oven.
- Melt butterscotch chips and peanut butter together and add Rice Krispies.
- Stir well. Spread over marshmallows.
- Cool.
- Cut in squares when cold.
- Keep refrigerated.
- Freezes nicely.
