Potato Bread
- 3 Tbsp. yeast
- 1/2 c. warm water
- 1 tsp. sugar
- 2 c. water
- 1/2 c. instant potatoes
- 1/2 c. sugar
- 1/2 c. powdered milk
- 2 tsp. salt
- 1/4 c. oil
- 2 eggs
- 1 tsp. soda
- 2 c. cottage cheese or plain yogurt
- 8 to 10 c. flour (can use 1/2 whole wheat)
- Dissolve yeast in 1/2 cup water and 1 teaspoon sugar.
- Heat to boiling.
- Add potatoes, sugar, milk, salt and oil.
- Let cool.
- Add soda to cottage cheese or yogurt.
- Mix together.
- Add eggs.
- Add 5 cups of flour; beat until smooth.
- Add remaining flour until ready to knead.
- Knead about 10 minutes.
- Let raise until double.
- Punch down and let rest 10 minutes.
- Divide into 5 portions.
- Shape into loaves.
- Put into greased pans; let raise until double.
- Bake at 350u0b0 for 35 to 40 minutes.
- Brush tops with butter.
