Crunchy Fudge Sandwiches

  1. In large saucepan, combine butterscotch chips and peanut butter; heat until melted and smooth.
  2. Add rice cereal; stir until well coated.
  3. Press half of mixture into a buttered 8-inch square baking pan.
  4. Chill in refrigerator while preparing fudge.
  5. Set remaining cereal aside.
  6. Combine over hot (not boiling) water, chocolate chips, sugar, butter and water.
  7. Stir until melted and smooth.
  8. Spread over refrigerated cereal mixture.
  9. Spread remaining cereal over top of chocolate.
  10. Press gently. Refrigerate until firm (about 1 hour).
