Chicken And Dressing Southern Style
- 1 hen, boiled and deboned
- 3 c. yellow cornmeal
- 1/2 tsp. soda
- 3 tsp. baking powder
- 1 tsp. salt
- 4 c. buttermilk
- 2 c. chopped celery
- 2 c. chopped onions
- light bread or biscuits
- 7 eggs
- 1 c. cream of chicken soup
- 1 can water (soup can)
- sprinkle of sage
- Mix meal, flour, soda, salt and milk and mix well.
- Beat 5 eggs well.
- Mix in eggs.
- Bake in 450u0b0 oven, not too brown.
- Boil chicken until tender with lots of water.
- When cooked, remove from broth.
- Pick from bones.
- Mix cornbread with broth (not too soupy).
- Add some biscuits or light bread, crumbled into small pieces, but not too many.
- Add eggs (beaten) to bread mixture. Mix in onions, celery and chicken.
- I add 1 can of cream of chicken soup and 1 can of water, if needed.
- Bake at 350u0b0 or 450u0b0 until lightly browned.
- Serve with giblet gravy and cranberry sauce.
