Veal (Or Pork) Parmesan
- 1/4 c. fine bread crumbs
- 1/4 c. grated Parmesan cheese
- 1/2 tsp. seasoned salt
- 1/2 tsp. ground pepper
- 1/2 tsp. paprika
- 5 (3/4-inch) veal (or pork tenderloin) cutlets
- 1 beaten egg
- 2 Tbsp. olive oil
- 5 thin slices Mozzarella cheese
- 1 (8 oz.) can seasoned tomato sauce
- 1 clove garlic, crushed
- 1 tsp. oregano
- Mix bread crumbs, Parmesan cheese, salt, pepper and paprika. Dip meat in beaten egg, then crumb mixture.
- Brown on both sides in hot olive oil.
- Place slice of Mozzarella cheese after each piece of meat.
- Sprinkle with oregano.
- Cover, simmer 50 minutes or until meat is done.
- Add water, if needed.
- Makes 4 servings.
