Old Style Scalloped Potatoes

  1. Heat oven to 350u0b0.
  2. Oil a 2-quart casserole lightly. Heat oil in medium saucepan on medium-high heat. Add onion. Cook and stir until tender.
  3. Stir in flour, salt, pepper and 1/8 teaspoon paprika. Blend in milk. Cook and stir on medium-high heat until sauce comes to a boil and is thickened.
  4. Layer 1/3 of the potatoes on bottom of casserole. Top with 1/3 of the sauce.
  5. Repeat twice. Cover.
  6. Bake at 350u0b0 for 1 hour and 15 minutes.
  7. Uncover. Bake 15 minutes longer or until potatoes are tender. Sprinkle with paprika and parsley. Serves 8.
