Shrimp, Pea And Mushroom Stir-Fry
- 1 Tbsp. cornstarch
- 1 tsp. salt
- 1 tsp. sugar
- 1 tsp. fresh grated ginger
- 3/4 c. chicken broth
- 2 Tbsp. soy sauce
- 1 large clove garlic, chopped
- 1/4 c. peanut oil
- 3/4 lb. sliced fresh mushrooms
- 1 (10 oz.) pkg. frozen peas or pea pods
- 1/4 c. minced green onion
- 1 1/2 lb. fresh shrimp, peeled and deveined
- Blend cornstarch, salt, sugar, ginger, chicken broth, soy sauce and garlic.
- Heat wok or large skillet.
- Add oil and mushrooms, fry 1 minute.
- Add peas and onion, fry 2 minutes.
- Add shrimp, cook until pink.
- Add chicken broth mixture and cook until thick.
- Serve with hot cooked rice.
- Makes 6 servings.
