M-M-M Good Fruit Cake
- 2 c. sifted flour
- 3 Tbsp. baking powder
- 1/2 tsp. soda
- 1/4 tsp. cloves
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 c. shortening
- 1 c. sugar
- 2 1/2 c. mincemeat or 2 (9 oz.) pkg. condensed
- 1 c. water
- 3 eggs, well beaten
- 1 can tomato soup
- 1 c. chopped nuts
- Add 1 cup water to the mincemeat; boil for 3 minutes, then cool.
- Set aside.
- Sift together the dry ingredients.
- Cream shortening and sugar.
- Add cool mincemeat; mix well together. Blend eggs.
- Add flour, alternately with soup.
- Mix until smooth. Mix in nuts.
- Pour into a greased tube pan.
- Bake at 350u0b0 for 80 minutes, or until done.
- Cool.
- Cover with white icing, or dribble with icing and decorate with nuts and cherries.
