Mansion Tortilla Soup
- 2 chicken breasts
- 1 Tbsp. corn oil
- 1 Tbsp. chopped garlic
- 1/2 c. chopped onions
- 3/4 c. peeled, seeded and chopped tomatoes
- 8 c. chicken broth (may have to supplement)
- white or black pepper to taste
- 1 tsp. cumin
- 1 can whole kernel corn
- 1 can pinto beans
- 1 pkg. corn tortillas, cut in julienne strips and softened in corn oil
- grated cheese
- diced avocado
- Cook chicken breasts until well done.
- Chop and reserve meat and stock.
- In 1 tablespoon corn oil, saute garlic, onions and tomatoes for 5 minutes (do this in a large heavy pan).
- Add beans and corn.
- Simmer until heated through, then add chicken broth, pepper and cumin.
- When this has heated through, add the chopped chicken.
