Kielbasa And Cabbage With Boiled Potatoes(6 To 8 Servings)
- 1 large head cabbage
- 1 large onion or 2 medium
- 6 medium carrots
- 6 apples (any kind)
- 6 to 8 red or white potatoes
- 2 pkg. low-fat (precooked) kielbasa or smoked sausage (Healthy Choice is good and low-fat), cut in 2-inch pieces
- 1 can chicken broth (14 oz.)
- 1/4 c. cider vinegar
- 2 (8 oz.) cans tomato sauce
- 1 (12 oz.) can beer (8 oz. plus 1 can water)
- 1/4 c. light brown sugar
- salt and pepper to taste
- caraway seed (1 to 2 tsp., optional)
- nutmeg and/or paprika to taste (approximately 1/2 tsp. each)
- Make on top of stove in large Dutch oven pot or bake in 300u0b0 to 350u0b0 oven in large roasting pan.
- Do not let liquids dry up; add water or beer as needed.
- Chop cabbage into quarters and separate layers apart into pot.
- Slice onion and separate rings into pot on top of cabbage.
- Scrub carrots and slice into 1/4-inch thick slices.
- Leave skin on apples; wash and slice into wedges or chunks.
- Add liquids, sugar, vinegar and spices.
- Cover and cook in oven 1 1/2 hours or longer; stove top also 1 1/2 hours or longer.
