Mediterranean Vegetable Casserole
- 1/4 c. olive oil
- 2 medium eggplant, sliced 1/4-inch
- 6 zucchini, sliced 1/4-inch
- 2 green peppers, sliced
- 2 large onions, sliced
- 6 fresh tomatoes, sliced
- 1 to 2 tsp. oregano
- salt and pepper to taste
- 1 jar marinara sauce
- 16 Italian sausages, cooked and sliced
- sliced Mozzarella and Provolone cheeses
- Pour oil in pan (13 x 9-inch or larger).
- Layer vegetables in following order until all used:
- eggplant, zucchini, onions, peppers, tomatoes and ending with eggplant; seasoning each layer with salt, pepper and oregano.
- Top with sliced, cooked sausages. Pour sauce over all.
- Bake, covered at 350u0b0 for one hour.
- Drain off some of the juices.
- Top with cheeses and return to oven until melted.
- Delicious, simple and serves the whole family plus a couple of friends.
