Mediterranean Vegetable Casserole

  1. Pour oil in pan (13 x 9-inch or larger).
  2. Layer vegetables in following order until all used:
  3. eggplant, zucchini, onions, peppers, tomatoes and ending with eggplant; seasoning each layer with salt, pepper and oregano.
  4. Top with sliced, cooked sausages. Pour sauce over all.
  5. Bake, covered at 350u0b0 for one hour.
  6. Drain off some of the juices.
  7. Top with cheeses and return to oven until melted.
  8. Delicious, simple and serves the whole family plus a couple of friends.
