Chicken Broccoli Casserole
- 2 (10 oz.) pkg. frozen broccoli spears
- 1/2 c. mayonnaise or less
- 1/2 tsp. lemon juice
- 1 1/4 c. cream of chicken soup, undiluted
- 1 or 2 c. rice
- 2 c. sliced, cooked chicken (or more)
- 1/2 c. cracker crumbs or seasoned croutons, crushed
- 2 Tbsp. butter, melted
- 1/4 c. grated sharp Cheddar cheese
- Grease a shallow 1 1/2-quart baking dish.
- Cook broccoli until almost tender; drain.
- Blend mayonnaise and lemon juice with soup. Arrange cooked broccoli in baking dish.
- Top with chicken slices and pour sauce evenly over all.
- Sprinkle with a mixture of bread crumbs and butter.
- Top with grated cheese.
- Bake in a 350u0b0 oven 1/2 hour or until topping is lightly browned.
- If desired, add 1/4 teaspoon curry powder to sauce mixture; blend well.
