Salmon Filet, Marinated In Red Wine
- 2/3 to 3/4 lb. filet of salmon
- 1/2 c. dry red wine
- 1/2 onion, sliced
- 1 carrot, sliced
- 1 Tbsp. juniper berries
- pat of butter, melted
- cooking oil
- lemon wedges
- Place salmon filet in marinating dish and spread onion, carrot and juniper berries around fish.
- Season fish with salt and pepper.
- Add wine; cover and refrigerate for 2 to 4 hours. Brush cooking surface with
- oil.
- Heat
- oven
- to 350u0b0.
- Remove fish from marinade and place, skin side down, on oven grill or in shallow pan.
- Brush
- fish lightly with melted butter.
- Bake for
- about 10 minutes,
- or
- until
- fish
- flakes
- when
- tested. Remove fish and cooking
- surface from oven, and carefully peel flesh away from skin.
- Serve with lemon wedges.
- Yields 2 to 3 servings.
