Apricot Delight
- 2 (3 oz.) pkg. apricot gelatin
- 2 c. boiling water
- 1 c. miniature marshmallows
- 1 (20 oz.) can crushed pineapple
- 2 c. cold water
- 2 bananas, finely chopped
- 1 c. chopped pecans
- 1 egg
- 2 Tbsp. flour
- 1/2 c. sugar
- 2 Tbsp. butter
- 3 oz. cream cheese, softened
- 1 envelope whipped topping mix
- Dissolve gelatin in boiling water in bowl.
- Add marshmallows, stirring until almost melted.
- Drain pineapple, reserving 1/2 cup juice.
- Add pineapple, cold water, bananas and pecans to gelatin; mix well.
- Pour into a 9 x 13-inch glass dish.
- Chill until set. Combine reserved juice, egg, flour and sugar in saucepan; mix well.
- Cook until thickened, stirring constantly.
- Stir in butter and cream cheese until melted.
- Chill completely.
- Prepare whipped topping using package directions.
- Fold into cream cheese mixture.
- Spread over gelatin.
- Chill for several hours.
- Yield: 12 servings.
