Candied Holly Cupcakes

  1. In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs. Combine the flour, baking soda and spices; add to creamed mixture alternately with buttermilk, beating well after each addition. Stir in the jam, pecans, cherries and orange peel.
  2. Fill paper-lined muffin cups three-fourths full. Bake at 350u0b0 for 20-25 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
  3. Frost cooled cupcakes. Decorate with cherries for holly berries and citron for leaves.
