George Strait'S King Ranch Chicken
- 1 (10 3/4 oz.) can cream of chicken soup
- 1 (10 3/4 oz.) can cream of mushroom soup
- 3/4 c. chicken broth
- 1/2 (10 oz.) can Ro-Tel tomatoes with green chile peppers
- 4 chicken breast halves, boned and skinned
- 1 (11 oz.) pkg. corn tortillas, cut into 6 pieces
- 1 medium onion, chopped
- 1/2 lb. Cheddar cheese, shredded
- 1 lb. dried red kidney beans
- 6 c. water
- 2 medium onions, chopped
- 2 ribs celery with leaves, chopped
- 1/2 green bell pepper, chopped
- 2 garlic cloves, crushed
- ham bone or bacon drippings (if available)
- 1 lb. or more large smoked link sausage, sliced
- optional seasonings: salt, freshly ground pepper, fresh garlic, cayenne pepper, bay leaves, thyme and/or oregano
- optional toppings: chopped green onion, jalapeno slices, grated sharp Cheddar cheese and liquid hot sauce
- Soak beans in water overnight or by the short soak method: Cover beans with water, ring to a boil, reduce heat and simmer 2 minutes, turn off heat, cover and let stand 1 hour.
