Chow Mein
- 1 lb. chow mein meat (beef, cubed, or pork)
- 2 c. diagonally sliced celery (1/2-inch slices)
- 1 medium onion, sliced
- 1 (4 oz.) can mushrooms stems and pieces, drained
- 3 Tbsp. cornstarch
- 3 Tbsp. soy sauce
- 1 (16 oz.) can chow mein vegetables or bean sprouts, rinsed and drained
- 1 (8 1/2 oz.) can water chestnuts, drained and sliced
- 1/2 tsp. ginger
- Combine chow mein, celery, onion, and mushrooms in a 2-quart casserole dish.
- Cover.
- Microwave 6 to 10 minutes on High or until meat is set.
- Dissolve cornstarch in soy sauce.
- Stir into meat mixture.
- Mix in chow mein vegetables, water chestnuts and ginger. Cover.
- Microwave for 6 to 10 minutes on High, or until vegetables are tender-crisp.
- Makes 4 servings.
