Old-Fashioned Chocolate Cake
- 1/2 cup shortening
- 1 cup sugar
- 2 large eggs, room temperature
- 1/3 cup mashed potatoes (without added milk and butter)
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 3 tablespoons baking cocoa
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup buttermilk
- 1/2 cup chopped walnuts
- Confectioners' sugar
- In a large bowl, cream shortening and sugar until light and fluffy. Add 1 egg at a time, beating well after each addition. Stir in mashed potatoes and vanilla. Combine the flour, cocoa, baking soda and salt; add to the creamed mixture alternately with buttermilk, beating well after each addition.
- Pour into a greased and floured 9-in. square baking pan; sprinkle with walnuts. Bake at 350u0b0 until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool completely. Dust with confectioner's sugar.
